The Fazenda Soledade

The cachaças Soledade, refined and unique sugarcane brandies, are the production of the Fazenda Soledade, family property of the Bastos Ribeiro brothers since 1977. Brazilian farm located in the state of Rio de Janeiro, near the provincial city of Nova Friburgo (New Fribourg), 150 km west of Rio and 1,200 meters above sea level in the heart of the "mata atlântica" (primary forest) classified as a UNESCO biosphere reserve.

The present agricultural estate and distillery of FAZENDA SOLEDADE was initially a coffee plantation established by the Ribeiro family's Italian ancestor in 1827. Located in the vicinity of Nova Friburgo, 150 km from Rio de Janeiro and at an altitude of 1,200 meters, the uniqueness of its agricultural fertility still strikes many while contemplating the beauty of the rainforest valleys.

In 1974, the Bastos Ribeiro brothers took over control of the Fazenda Soledade to produce their cachaças. The 76-hectares estate rests in the heart of the Atlantic forest amid a Private Reserve of Natural Heritage (PRNH), a sustainable conservation area created to preserve biodiversity. In addition to its own few hectares of sugar cane, the small property showcases a lovely Swiss-Austrian architecture wooden chalet equipped with two traditional stills, known as "pot stills". This technique allows the delicate batch distillation of pure sugar cane juice pressed at the Fazenda to evolve into ultra-premium cachaças.

Behind the chalet, two aging cellars house the traditional variety of Brazilian native wood barrels (Ipe, Balsamo, Umburana, Pau-Brasil, Jequitiba) to ensure slow and optimum aging of the sweet cachaças of this high-altitude estate.

Cachaça Soledade Ipé

For its production, the estate selects the same spirits at the end of the still as those used to produce Soledade Pura Cachaça, then ages them for 18 to 24 months in Brazilian ipe wood casks. Thanks to the climate and altitude, the ipe wood softens the cachaça while adding almond, cocoa, vanilla and cinnamon notes. It shows a long, clean finish with pleasant acidity.
